Date Fruit Cake
| A 1 cup butter ¾ cup white sugar ½ cup brown sugar 1 cup mixed fruit 1 cup seedless dates 2 cups water Pinch of salt 1 teaspoonful vanilla essence 1 teaspoonful orange essence ************************** 3 eggs 8”x8” greased square cake tin grated zest of ½ orange (optional) ************************** B 1 ½ cups wheat flour 1 ½ cups cake flour ½ teaspoonful baking powder 1 ½ teaspoonful sodium bicarbonate 1. Mix ingredients A in a saucepan and heat until boiling. Boil for further 2-3 minutes. Set aside to cool. 2. Beat the eggs slightly, then add to A. Mix well. Pour into a large mixing bowl. 3. Mix ingredients B. Sieve into the mixture in mixing bowl. Mix well. 4. Pour into the cake tin. Bake for 45 minutes at 180 degrees Celcius. | |
